Ingredients for making Pintado ao annatto:

 1 kilogram of painted filet

 1 unit of lemon

 Black pepper

 salt

For breading and frying:

 2 egg units

 1 bowl of breadcrumbs

 1 bowl of wheat flour

 frying oil

For the sauce:

 2 garlic cloves

 1 unit of onion

 1 tablespoon of annatto powder

 1 tablespoon of soy oil

 1 can of sour cream

 ½ bottle of coconut milk

 200 grams of grated or sliced ​​mozzarella

 1 pack of chopped green scent

How to make Pintado ao annatto:

The first step of this painted annatto recipe is to season the fish with lemon juice, salt and pepper to taste. If the fillets are large, as in the photograph, cut them into smaller pieces. Set aside for 10-15 minutes in the refrigerator.

Then pass the fillets in the flour, then in the beaten eggs and finally in the breadcrumbs. Fry in hot oil until browned and set aside on a grill or absorbent paper.

Prepare the sauce for the painted annatto: place over medium heat a deep skillet with the oil, onion and chopped garlic. Let it fry until golden.

Add the cream, coconut milk, green scent and annatto, season with salt and pepper to taste. Cook until thickened, stirring occasionally.

Place fillets on a baking sheet, cover them with the previous sauce and arrange the mozzarella in slices or grated. Bake in a preheated oven at 200ºC for 10-15 minutes, or until golden.

Serve the painted annatto afterwards, accompanied by, for example, curried vegetables, and bon appetit!
